DELICIOUS One Pan Chicken & Rice! | EASY Chicken Recipe
I love making braised dishes like this easy chicken and rice recipe! So many deep flavors and a very easy one pan dinner recipe! Please watch the whole video so you don’t make the same mistake I did! Enjoy!
INGREDIENTS
• 6 bone-in, skin on chicken thighs
• 3 tbsp Chef Ange Base Seasoning - https://youtu.be/1Yt_jN1tDfY
• 1 tsp smoked paprika
• 4 tbsp olive oil
• 1 red bell pepper, small dice
• 1 medium onion, small dice
• 8-10 garlic cloves, minced
• 1 shallot, fine dice
• 8 oz, mushroom, cut into quarters
• small bunch fresh parsley, stems removed & finely chopped
• 1 lb Italian sausages
• 1 tsp Italian Seasoning
• ½ tsp crushed red pepper
• 1 cup long grain rice
• 2 tsp white wine vinegar
• 2 tbsp white wine
• 15oz can fire roasted diced tomatoes
• 2 tsp chicken bouillon paste
• 1 – 1 ½ cup low sodium chicken stock (reduce liquid a little based on whatever rice you’re using)
• 2 tbsp capers, drained
DIRECTIONS
1. Season chicken thighs with 2 tbsp Chef Ange Base Seasoning - https://youtu.be/1Yt_jN1tDfY, smoked paprika and 2 tbsp oil.
2. Preheat oven to 350F
3. In a large heavy bottomed pan over medium high heat, brown sausages and chicken thighs on all sides. Work in batches to avoid overcrowding your pan if needed. Remove from pan and set aside when browned. They do not have to be fully cooked at this point.
4. Reduce heat to medium, add onions and cook for 2-5 minutes until soften and starting to take on color. Add shallots and red bell peppers. Cook until soft, about 2-3 minutes and move around to clean the bottom of the pan.
5. Add mushrooms and garlic and cook for 1-2 min or until fragrant.
6. Season with 2 tsp Chef Ange Base Seasoning - https://youtu.be/1Yt_jN1tDfY, Italian seasoning, crushed red pepper.
7. Add dried rice. Mix and cook 1-2 minutes
8. Add white wine and vinegar. Mix and let evaporate for about 1 minute.
9. Add canned tomatoes and bouillon paste. Mix and cook 1-2 minutes.
10. Add chicken stock and bring to a low boil. After sausage has cooled, cut into pieces and mix back into pan. Place chicken thighs on top of mixture skin side up.
11. Cover with aluminum foil or cover and put in oven for 30-40 min.
12. Remove from oven and let cool for 5 min covered. Set cooked chicken aside and fluff rice with fork. Return chicken to pan and garnish with capers and fresh chopped parsley.
